A grease trap can still look full after pumping because it is designed to hold water while the kitchen is operating. Water may be restored after service, and normal sink or dishwasher use sends more water through the interceptor. Do not remove or reposition a component. Ask the service provider to verify the internal arrangement against the exact interceptor and its installation. The appropriate position and operating level vary by design.
What Signs Call for Prompt Follow-Up?
Request follow-up when the condition involves more than a stable volume of water. Useful warning signs include:
- Water continues to rise while connected fixtures are used normally.
- One or more connected sinks drain slowly or back up.
- Wastewater escapes around the cover, a fitting, or the surrounding floor.
- A strong persistent odor appears with slow flow or leakage.
- A substantial grease layer or settled material was safely seen during a provider-controlled opening.

If wastewater is escaping, stop using the connected fixtures when it is safe to do so. Keep staff and customers away from the affected area, protect nearby electrical equipment from water, and request professional help. Do not keep running water to see whether the problem clears.
How Can You Check the Situation Safely?
Grease-interceptor covers can be heavy, and the chamber may contain contaminated wastewater and gases. Kitchen staff should not open the unit solely to inspect the contents. Never enter the chamber or lean over an open interceptor.
Avoid these actions:
- Do not insert a stick, ruler, sampling tube, cable, or improvised measuring tool.
- Do not stir the water or floating material.
- Do not remove baffles, tees, caps, or flow-control components.
- Do not pour chemical drain cleaner, degreaser, boiling water, or another product into the trap.
- Do not mix products already present in connected drains.
- Do not take photos if doing so requires opening, moving, or leaning over a cover.
Safe observations can usually be made from outside the unit. Note which fixtures are affected, when the level or backup appears, whether wastewater is leaking, and whether the condition changes during ordinary kitchen use. If the provider has the unit open under controlled conditions, ask for photographs or a service explanation rather than approaching the chamber yourself.
What Should You Document Before Calling?
Good records help separate a normal post-service water level from a flow or service concern. Gather the information that is already available without manipulating the unit:
- The service date and the work described on the invoice or service record.
- The time the full-looking condition was first noticed.
- Which sinks, dishwashers, floor drains, or other fixtures connect to the interceptor, if known.
- Whether any connected fixture is slow, noisy, or backing up.
- Whether the level appears stable or rises during ordinary use.
